Chickpeas with Romesco Sauce


Chickpeas in flavorful roasted red pepper sauce (romesco).

This healthy vegan recipe starts with oil-free roasted red peppers.

Ingredients ~ red peppers ~ shallots ~ almonds ~ tomatoes ~ garlic powder ~ smoked paprika ~ crushed chili ~ red wine vinegar ~ maple syrup ~ chickpeas

Roast red peppers and 2 shallots in the oven. 

Grind the almonds, then blend the sauce ingredients. 

Transfer the sauce to a pan and add the chickpeas. 

Simmer for 10 minutes.
