It's surprisingly easy to make vegan Shepherd's Pie

Cozy comfort with hearty helpings of wholesome ingredients.

Filling with:   red lentils  carrots, onions, celery, garlic, tomatoes, red wine, miso paste, thyme, Worcestershire sauce, 

Sauté the veggies, add garlic and miso paste. Deglaze with red wine. Then add tomatoes, thyme, and Worcestershire sauce.

Add red lentils and simmer them until tender. Add a little water if needed.

Cook peeled and cubed sweet potatoes.  Mash with salt and paprika.  Spread over the filling.

Bake until the filling is hot and the crust is brown and crispy.
