Dairy-Free Potato Soup Recipe

3 Leeks, chopped 3 cloves Garlic, minced 1/2 tsp. Black Pepper 2 1/2 pounds Potatoes 6 cups Vegetable Broth 1/4 cup Nutritional Yeast 2 sprigs fresh Thyme 1 Bay Leaf 1/4 cup chopped Chives salt/pepper to taste

Step 1: Cook leeks in 1/4 cup of broth.

Step 2: Add garlic and pepper.

Tip: Thin-skinned potatoes don't need to be peeled  (extra fiber).

Step 3: Add potatoes, nutritional yeast, and broth.

Step 4: Add fresh thyme and bay leaf.

Step 5: Simmer until the potatoes are tender.

Step 6: Remove the bay leaf and thyme stem. Puree the soup.

Step 7: Stir in chopped chives.
