Quinoa Pilaf

Easy vegan quinoa pilaf with chickpeas is a simple one-pot dish packed with protein and nutrients and made without added oil for a healthy lunch or light main course.



Step 1:  Cook onions and carrots.

Step 2:  Add garlic and spices. 

Step 3:  Toast the quinoa with the tomato paste. 

Step 4:  Add broth and chickpeas.
