Freekeh Salad



Freekeh is an ancient grain that is high in protein and fiber.

Ingredients ✔ Cumin seeds ✔ Freekeh ✔ Chickpeas ✔ Vegetable broth ✔ Celery ✔ Green onions ✔ Mint ✔ Lemon juice ✔ Garlic ✔ Chili flakes

Step 1:  Toast cumin seeds in a medium pot.

Step 2:  Add freekeh, chickpeas, and broth.  Simmer for 20 minutes.

Step 3:  In a bowl, mix lemon juice, garlic, chili, and pepper.

Step 4:  When the freekeh is tender and the broth is absorbed, fluff the contents.

Step 5:  Transfer the freekeh to a bowl. Then add the lemon dressing.

Step 6:  Add celery, green onions, and mint.
