Indian  Potato & Broccoli  Curry Gravy Recipe

Oil-free Tip: Heat the pan before adding ingredients to keep food from sticking.

Add diced onions.

Add minced garlic.

Toss in all the spices.

Mix sautéed onions, garlic, and spices.

Add diced potatoes.

Sauté the potatoes to soften.

Pour in vegetable broth.  Tip: Stir the bottom of the pot to loosen stuck-on veggies and spices.

Cover and simmer the potatoes.

Check that the potatoes are fork tender.

Add broccoli florets.

Cover the pot and steam the broccoli for a few minutes until it's bright green and tender.

Careful not to overcook the broccoli.

Make a slurry of chickpea flour and water.

Add to the pot.

Mix the slurry into the pot. let it simmer for a few minutes.
