Hot & Sour stock Veggies Tofu Cornstarch Slurry

Let's Get To It!

Use firm or extra firm tofu.  Press if needed.  Cut into cubes.

Step 1: Tofu

Step 2:  Make the Stock. 

- 6 cups veggie broth - 1/2 cup soy sauce -1/2 cup rice vinegar - 1 tsp. ginger - 2-3 tsp. Sriracha (or chili paste of choice) - 1 tsp. black pepper

Set steam Handle to SEALING HIGH PRESSURE 2 minutes Quick Steam Release

Step 3: Add Veggies & Tofu

- 1 lb. Sliced Mushrooms - 1 carrot (matchsticks) - 1 can bamboo shoots - 1 can water chestnuts - 7 scallions (white &  green parts) - Tofu Cubes

Step 4: Slurry & Tofu

- Make a slurry of 3 Tbsp. cornstarch & 1/4 cup water. - Add the slurry & tofu.

- Secure the Lid - HIGH PRESSURE 3 minutes - Quick Release

Taste. Adjust the spices. Serve hot
