Instant Pot Pinto Beans and Rice

This easy recipe uses dried pinto beans, brown rice, tomatoes and spices for an delicious Instant Pot vegan dinner.

Ingredients:  ~ soaked pinto beans ~ onion ~ red peppers ~ jalapenos ~ garlic ~ brown rice ~ tomatoes ~ broth ~ chili powder ~ cumin ~oregano ~ lime juice

Soaked beans cook better and are easier to digest. 

Mix the ingredients.

Pour tomatoes over the top and pressure cook for 23 minutes. 

Stir the ingredients, then stir in lime juice and cilantro.
