Instant Pot Spanish chickpea soup made with dried chickpeas is a delicious vegan soup. 

Ingredients ~ dry chickpeas ~ red peppers ~ sundried tomatoes ~ canned tomatoes ~ smoked paprika ~ sherry vinegar ~ vegetable broth ~ almonds ~ parsley ~ crushed red chili

Soak chickpeas before cooking. 

Roast peppers in the oven. They are healthier and cheaper. 

Cook veggies. 

Stir in chickpeas, vinegar, and broth. 

20 minutes High Pressure + 10 minutes NPR.

Chop almonds, parsley, and crushed red chili.
