Lemongrass wild rice salad features lemongrass tofu, broccoli, and a zesty lemongrass dressing.

Ingredients ~ wild rice ~ tofu ~ broccoli ~ lemongrass ~ dates ~ ginger ~ green onions ~ cilantro ~ peanuts ~ coconut aminos ~ sriracha

Marinate tofu for extra lemongrass flavor. 

Cook wild rice on the stove or in the Instant Pot. 

Bake or air fry lemongrass tofu. 

Make creamy lemongrass dressing. 

Mix everything in a bowl and top with chopped peanuts.
