One-Pot Zucchini Chili


Try this one-pot vegan zucchini chili recipe with veggies, spices, fresh herbs, and beans for a quick, flavorful, low-fat, oil-free, meatless dinner. 

A full-flavor chili with veggies, pinto beans, and a handful of spices. 

Cook onions, jalapenos, garlic, and spices. 

Mix in red pepper, and zucchini.

Add red wine. Then tomatoes, pinto beans, parsley, fresh oregano, and chopped cilantro. 

Stir and let it simmer.
