Red beans and quinoa is an easy, one-pot vegan meal you can make in 30 minutes.

Ingredients: Onions Green Pepper Celery Garlic Quinoa Red Beans Vegetable Broth Cider Vinegar Smoked Paprika Thyme Tabasco (hot sauce)

Tip: Always rinse quinoa before cooking to remove any bitter flavor and dust. 

Heat a pan and cook the onions, green peppers, and celery. 

Add quinoa, beans, broth, and seasonings.

Simmer until the liquid is absorbed (15 minutes).
