Sweet Potato Curry

Make a sauce of Thai red curry paste, peanut butter, and vegetable broth. 

Cook onions, red chili, garlic, and ginger. 

Stir in peanut sauce. 

Add coconut milk and cubed sweet potatoes. 

Simmer until the potatoes are tender. 

Stir in chopped spinach and lime juice. 

Garnish with chopped peanuts and sliced chili.
