Thai peanut sauce Noodles Mango Veggies Spinach

The Dressing:  Peanut Butter Soy Sauce Rice Vinegar Lime Juice Date Paste Sriracha Ginger Water to thin

The Salad:  Thai peanut dressing Noodles Mango chunks Fresh spinach Cucumber Sugar snap peas Scallions Fresh red chili Cilantro

Make the Dressing by mixing all the ingredients.  Add water until you have a pourable consistency. 

Don't forget the lime juice!

Steam or blanch sugar snap peas for 1-2 minutes until bright green and crispy. 

After cooking the noodles, mix them with fresh spinach and half the peanut sauce.

Add mango, sugar snap peas, scallions, cucumber and diced red chilis. 

Mix everything and get ready to dig in!
