Vegan Greek Salad w/ Beluga Lentils

Simply delicious! A healthy, oil-free Greek salad with beluga lentils (black lentils).

This easy salad is perfect for your Veganuary kickoff!

Ingredients

~ black lentils ~ bell peppers ~ cucumber ~ red onion ~ tomatoes ~ olives ~ parsley and basil

Herb Vinaigrette

~ red wine vinegar ~ Dijon  mustard ~ maple syrup ~ basil & oregano ~ garlic & onion powder ~ salt & pepper

Cook black lentils on the stove (20 minutes) or in the Instant Pot.

Rinse cooked lentils, then mix in the dressing. 

Mix with the rest of the ingredients and remaining salad dressing.
