Vegan Italian Pasta Salad Recipe

This vegan Italian pasta salad recipe is the perfect summertime side or 4th of July celebration!

Crunchy veggies, artichokes, olives, and creamy vegan Italian dressing. 



Ingredients:  ✔ cooked pasta  ✔ Italian dressing ✔ artichoke hearts  ✔ fresh basil ✔ olives ✔ tomatoes ✔ cucumber ✔ red bell pepper ✔ red onions

Step 1: Cover the dry cashews in boiling water. 

Tip: White balsamic vinegar is the secret ingredient🤐

Step 2: Blend the cashews and other ingredients, plus water. 

Step 3: Stir in Italian seasoning and black pepper. 

Step 4: Rinse the cooked pasta, then add the veggies. 

Step 5: Add the dressing.
