Vegan Meatloaf

This vegan meatloaf with high-protein lentils, veggies, and a sweet balsamic glaze is a winner of a dinner!

Step 1: Cook green lentils. 

Step 2: Cook mushrooms, carrots, onions, celery, and and other veggies, plus herbs and spices.

Step 3: Blend with oats, walnuts, and flax egg. 

Step 4: Spread in a baking dish.

Step 5: Make a balsamic glaze with tomato paste, balsamic vinegar, and maple syrup.

Step 6: Spread glaze over lentil loaf.

Step 7: Bake until firm. Slice and enjoy!
