Vegan  Portobello  Mushrooms Recipe

Portobello mushrooms are stuffed with a quick hummus recipe with sumac and topped with toasted chickpeas, for an elegant and healthy vegan dinner.

Ingredients ✔ mushrooms chickpeas lemon juice tahini garlic sumac thyme sesame seeds

Step 1: Gently remove the stems and clean the gills from mushrooms. 

Step 2: Mix half a can of chickpeas with lemon juice, tahini, garlic, sumac, thyme, salt, and sesame seeds. 

Step 3: Stuff the mushrooms with filling, add remaining chickpeas and sesame seeds on top. 

Step 4: Bake for 30 minutes until the mushrooms are tender.
