2 tsp. cumin seeds
1 cup freekeh
1 can chickpeas
2 cups veggie broth
1 cup celery
5-6 scallions
1/2 cup mint
1/3 cup lemon juice
2 garlic cloves
1/2 tsp. chili flakes
Step 1:
Toast cumin seeds in a medium pot.
Step 2:
Add freekeh, chickpeas, and broth.
Simmer for 20 minutes.
Step 3:
In a bowl, mix lemon juice, garlic, chili, and pepper.
Step 4:
When the freekeh is tender and the broth is absorbed, fluff the contents.
Step 5:
Transfer the freekeh to a bow. Then add the lemon dressing.
