Mixed Vegetable Curry

Cozy mixed vegetable curry is a healthy twist on traditional Indian curry. 

Delicious, warming, and made for second helpings!

With a variety of vegetables, Indian spices, and crispy tofu, this is a full meal in a bowl. 

Blend spices, ginger, garlic, and red chilies for the curry paste. 

Tomato curry sauce uses white beans for  a creamy healthy sauce. 

Bake or air fry tofu. 

Cook fresh veggies, then stir in curry paste. 

Simmer in tomato curry sauce. 

Mix in frozen peas, tofu, and cilantro.
