- 1 medium avocado
- 1 cup basil leaves
- 2 tablespoons chives chopped
- 2 tablespoons parsley chopped
- 2 cloves garlic peeled and roughly chopped
- 3 medium green onions scallions, white and green parts
- 2 tablespoons lemon juice
- ½ teaspoon ground black pepper
- Salt to taste
Cut the avocado in half, then remove the pit and scoop the flesh into a food processor or blender. Add all the ingredients except the salt. Blend until smooth and creamy.
Taste and add salt or black pepper as desired.
Thin the dressing by adding more lemon juice or a little water.
Makes about 1 ¼ cups.
