Avocado Green Goddess Dressing

Healthy avocado green goddess dressing is vegan and oil-free and is a flavorful, creamy dressing with fresh ingredients that take minutes to make in the food processor or blender.

Ingredients

  • 1 medium avocado
  • 1 cup basil leaves
  • 2 tablespoons chives chopped
  • 2 tablespoons parsley chopped
  • 2 cloves garlic peeled and roughly chopped
  • 3 medium green onions scallions, white and green parts
  • 2 tablespoons lemon juice
  • ½ teaspoon ground black pepper
  • Salt to taste

Instructions

  • Cut the avocado in half, then remove the pit and scoop the flesh into a food processor or blender. Add all the ingredients except the salt. Blend until smooth and creamy.
  • Taste and add salt or black pepper as desired.
  • Thin the dressing by adding more lemon juice or a little water.
  • Makes about 1 ¼ cups.

Notes

  • Nutritional information based on ¼ cup serving. 
  • This dressing is best if eaten fresh, but you can store it in an airtight container in the refrigerator overnight.
  • You can use frozen avocado if you can’t find a fresh, ripe avocado.
