Ingredients

  • ¼ cup tahini
  • cup lemon juice
  • 1 tablespoon maple syrup
  • 2 teaspoons Dijon mustard (see note 1)
  • 1 teaspoon garlic minced or pressed
  • ¼ teaspoon salt (see note 2)

Instructions

  • Add the tahini, lemon juice, maple syrup, garlic, and 2 tablespoons of water to a small bowl or jar.
  • Whisk (or shake) the ingredients until the dressing is smooth and creamy. Add more water or lemon juice, a tablespoon at a time, until you reach the desired consistency.
  • Taste and add up to ½ teaspoon of salt (if needed. Add more lemon juice for added zing or maple syrup for a sweeter dressing.
  • Makes ¾ cup.

Notes

  1. You can substitute Dijon mustard with regular prepared mustard or spicy grainy mustard if desired.
  2. Add salt after mixing the other ingredients, then tasting. Some tahini has added salt, and Dijon can taste salty.
  3. Store dressing in the refrigerator for up to a week. I don’t recommend freezing tahini-based dressings.
  4. Nutritional information based on 2 tablespoons of dressing.
