Chunky Vegan Irish Stew

Ingredients

  • 1 small onion chopped, ½ cup
  • 10 ounces mushrooms dice 4 mushrooms, cut the rest in half
  • 3 stalks celery diced
  • 4 cloves garlic minced or pressed
  • 1 teaspoon rosemary
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon mustard powder
  • ½ teaspoon salt optional
  • ½ teaspoon black pepper
  • ¼ cup flour see notes
  • 473 milliliters Guinness beer 1 can or bottle
  • 3 tablespoons tomato paste
  • 2 tablespoons maple syrup
  • 2 cups vegetable broth
  • 1 pound shallots peeled with ends trimmed
  • 2 pounds potatoes baby or thin-skinned, cut into smaller pieces if necessary
  • 3 medium carrots peeled and sliced
  • 3 medium bay leaves

Instructions

  • Finely dice 4 of the mushrooms.
  • Heat a large Dutch oven or a large pot over medium heat. Add the diced mushrooms, onions, and celery. Cook the vegetables for 3-4 minutes until they start to soften. Stir frequently.
  • Mix in the garlic, rosemary, paprika, mustard powder, salt, and pepper. Stir for 30 seconds.
  • Pour in the beer to deglaze the bottom of the pot. Stir to release any stuck-on vegetables. Stir in the tomato paste and maple syrup. Lower the heat, cover the pot, and simmer for 10 -15 minutes until the sauce has reduced. Take the pot off the heat.
  • Preheat the oven to 300 F (150 C).
  • Stir in the broth. Use a wooden spoon to clear the bottom of the pot. Then mix in the tomato paste, shallots, potatoes, carrots, and bay leaves.
  • Cover the pot and bake for 1 hour or until the vegetables are tender and the sauce has thickened. Stir a few times as it bakes. Add more vegetable broth if needed.
  • Remove the stew from the oven and let it sit for 5 minutes to settle.

Notes

  • I used a strong wheat flour, but all-purpose or another wheat flour are good options. For a gluten-free option, use cornstarch.
  • Guinness Stout is vegan. If you use another stout beer, check the labels.
  • ​Guinness can leave a slightly bitter flavor. Adjust with added maple syrup or tomato paste.
  • Store leftover stew in an airtight container in the refrigerator for 5 days or freeze for 3 months.
