Ingredients

  • 1 medium shallot minced, 3 tablespoons
  • 3 tablespoons Dijon mustard
  • 2 tablespoons tahini
  • 4 tablespoons lemon juice 1 medium lemon
  • 2 tablespoons nutritional yeast
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground black pepper
  • Salt to taste optional
  • Water as needed

Instructions

  • Add all the ingredients to a bowl or jar with a lid.
  • Whisk or shake the ingredients, then add water a few tablespoons at-a-time until you reach the desired consistency.
  • Makes 1 cup.

Notes

  • Nutritional information is based on 2 tablespoons per serving.
  • For a smoother consistency, use a blender or food processor to blend the ingredients.
  • Add salt after you’ve tasted the blended dressing. The mustard and nutritional yeast may contain enough salt to suit you.
  • Mustard tahini dressing keeps for several days in the refrigerator.
  • Scallions are the best substitute for shallots. Use the same amount (3 tablespoons) of minced scallions.
  • If you want a mellow mustard flavor, consider a blend of Dijon and regular yellow mustard.
