This savory dressing highlights the sharp, umami flavors of Dijon mustard. It isn’t intended as a ‘honey’ mustard dressing. Think of mustard tahini when you want a change from lemony sriracha tahini dressing or when you’re dreaming of leafy salads on the salty side.

Recipe Ingredients and Notes

Shallot – Shallots are a bit mellower than onions with garlic undertones. When minced small and blended raw, they provide an onion flavor without being too strong.
Dijon mustard – It’s mustard tahini dressing, friends. Dijon has a bit of a kick, so you may want to start with 2 tablespoons or use American-style mustard or a mix.
Tahini – Sesame paste should be nothing but ground sesame seeds. There are differences with tahini. You'll discover that right away if you look at the store shelves. Some brands add salt or are processed with additional oil.
Confused? Make your own tahini. It’s super simple and, in my opinion, better than anything you can buy. Plus, it’s the ultimate quality control.
Lemon juice – Some dressings use vinegar for the acid. Lemon juice isn't as sharp and adds just the right amount of brightness to this dressing.
Nutritional yeast – ‘Nooch' adds a bit of salty-cheesy flavor. Miso paste is a good option here, or check out my longer list of nutritional yeast substitutes.

Instructions and Pro Tips

- This dressing is super easy to make. Add all the ingredients to a bowl and whisk. Or toss them in a jar and shake. The trick is adding water a little at a time until you have a consistency you like.
- If you find it easier, toss everything in a small blender or spice grinder. Blend away!
Denise's Tip: Tahini dressings thicken as they stand. Stir before serving, and add a little more water or lemon juice if needed.

Serving Suggestions

This is a great dressing for traditional green or chopped salads, but I recently used it with a veggie pasta salad, and it was delicious. Plus, you can make the dressing and pasta salads ahead for barbecues or picnics.
Storage
Store mustard tahini dressing in the refrigerator in a sealed jar or container. It keeps for 3-4 days. Stir and thin it out before reserving.
Frequently Asked Questions
Dijon mustard is spicier than regular mustard. Unlike yellow mustard, made with white and yellow mustard seeds, Dijon is made from black mustard seeds and contains less vinegar. Dijon is pale yellow in color, while regular mustard is bright yellow.
Shallots don’t have the same ‘bite’ that other raw onions do. However, consider scallions (green onions) if you need a substitute. You can also use red onions in an equal amount that you would use for the shallots in a recipe.
Nutritional yeast is made from dried, deactivated yeast cultures and has a savory, fermented, 'cheesy' flavor. Plant-based eaters use nutritional yeast as a good B vitamins (B12) source.

Creamy Mustard Tahini Dressing (Vegan)

Ingredients
- 1 medium shallot - minced, 3 tablespoons
- 3 tablespoons Dijon mustard
- 2 tablespoons tahini
- 4 tablespoons lemon juice - 1 medium lemon
- 2 tablespoons nutritional yeast
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground black pepper
- Salt to taste - optional
- Water - as needed
Instructions
- Add all the ingredients to a bowl or jar with a lid.
- Whisk or shake the ingredients, then add water a few tablespoons at-a-time until you reach the desired consistency.
- Makes 1 cup.
Notes
- Nutritional information is based on 2 tablespoons per serving.
- For a smoother consistency, use a blender or food processor to blend the ingredients.
- Add salt after you’ve tasted the blended dressing. The mustard and nutritional yeast may contain enough salt to suit you.
