This oil-free Jamaican jerk tofu recipe features an easy jerk marinade using prepared jerk seasoning for spicy and crispy tofu straight from the air fryer or oven.

Tofu readily takes on any flavor profile you give it. Whether you blend it to make sheet pan vegan bacon, massage it for savory sausage crumbles, season it for salt and pepper crispy tofu, or marinate tofu cubes for a spicy Jamaican vibe, tofu is always ready to take it on.
For this recipe, I made an easy marinade with a handful of ingredients plus a few teaspoons from a jar of jerk seasoning as the base with a little cornstarch to crisp tofu before brushing it with more marinade.

Ingredients, Notes, and Substitutions

Tofu. Use a block of firm or extra-firm tofu. Silken tofu has a higher water content and won't retain its shape or texture.
Jamaican jerk seasoning. A spicy-sweet combination of warming spices like allspice, cinnamon, cumin, and chili spice. There are numerous jerk recipes available if you want to make your own.
Green onions. Scallions (green onions) add flavor and body to the marinade. A large shallot or ½ a small red onion are the best alternatives.
Lime juice. Limes are slightly sweeter, but you can use lemon juice. Orange juice is another option.
Cornstarch. A tablespoon of cornstarch is added right before cooking to crisp the tofu. Tapioca starch, potato starch, or arrowroot are the best substitutes, although you can use all-purpose flour in a pinch.
Soy sauce. Use tamari or coconut aminos as gluten-free options.

One of my favorite things about this recipe is that you can make it fiery hot by adding a jalapeno or Scotch bonnet peppers to the marinade or mellow it out by adding less jerk spice.

Step-by-Step Instructions

Step 1: Press a block of tofu to eliminate excess water. Cut it into cubes or slices.

Step 2: Blend the rest of the ingredients to make the marinade.

Step 3: Cover all sides of the tofu with marinade. Marinate the tofu for 1 hour or overnight.

Step 4: Shake excess marinade from the tofu pieces and add them to a plate or bowl. Mix with cornstarch.

Step 5: Bake or air fry the tofu in a single layer.

Step 6: Flip a few times, brushing more marinade over the top of the tofu.
Pro Tips
- Some jerk seasoning is notoriously hot. Check the jar for the spice level. Add 1 teaspoon (or less) to the marinade and adjust after blending.
- Pressing tofu clears the moisture so more marinade absorbers and makes the texture firmer. If you use a tofu press, cut the block into quarters for quicker pressing.
- Always preheat the oven or air fryer before cooking. Otherwise, the tofu will stick to the baking tray or basket.
- Test the spiciness of jerk seasoning by adding 1 teaspoon, then tasting and adding more as needed.
- Marinate at room temperature for a few hours or overnight in the refrigerator.
- Oven and air fryer temperatures vary, so keep a close eye during cooking. You want the tofu to be golden brown but not too dry. The final cooking time will depend on the size of the tofu pieces.

Serve jerk tofu over coconut rice, quinoa, or a mix of sauteed bell peppers and onions. For something special, side it with pineapple chutney or mango pico de Gallo.
Heat leftover marinade in a small saucepan over medium-high heat and use it as a sauce or dressing for Jamaican tofu bowls.

If you follow this recipe, Jamaican jerk sauce or marinade is vegan because the one prepared ingredient - jerk seasoning contains vegan spices. If you use a prepared jerk sauce, always check the labels. Some can contain animal products or added oil.
In general, marinate tofu for at least 15 minutes and up to 20 hours. For this recipe, I recommend an hour of marinating. After 24 hours, tofu can start losing shape and may not cook properly.
Store leftover jerk tofu in an airtight container in the refrigerator for 3-4 days. Reheat it in the air fryer, microwave, or oven.

Oil-Free Jamaican Jerk Tofu Recipe

Ingredients
- 16 ounces tofu - 1 block, firm or extra-firm
- 4 medium green onions - white and green parts
- ¼ cup soy sauce
- ¼ cup lime juice
- 1 ½ tablespoons maple syrup
- 2 cloves garlic - minced or pressed
- 2 teaspoons ginger - minced
- 1-2 teaspoons jerk seasoning
- ¼ - ½ teaspoon cayenne pepper - (optional)
- 1 tablespoon cornstarch
Instructions
- Remove the tofu from the packaging, then press it. Use a commercial tofu press. Alternatively, wrap the block in paper towels and place it between two flat surfaces. Weigh the top down to press the moisture from the tofu (about 15 minutes).
- Add the green onions, soy sauce, lime juice, maple syrup, garlic, ginger, and 1 teaspoon of jerk seasoning to a blender or food processor. Blend until smooth.
- Taste the marinade and add additional jerk seasoning or cayenne pepper if desired.
- Cut the tofu into bite-sized pieces or cubes. Place them in a shallow bowl or rimmed plate.
- Cover the tofu with the marinade. Gently toss the tofu pieces a few times to coat them. Cover the dish and marinate the tofu for at least an hour.
- Shake off excess marinade from each tofu piece and place them in a clean dish. Mix with cornstarch until each piece is well-covered.

How to air fry jerk tofu
- Preheat the air fryer to 375 degrees (190 C).
- When it's preheated, place the tofu in a single layer in the air fryer basket (or rack).
- Fry the tofu for 6 minutes, then flip and brush with tofu with marinade.
- Air fry for another 4 minutes. Toss it, brush on more marinade, and cook for another 1-2 minutes.
How to bake jerk tofu
- Preheat the oven to 425 degrees (220 C). Line a baking tray with parchment paper or a silicone baking mat.
- Place the tofu in a single layer on the baking tray. Bake for 15 minutes.
- Flip the tofu. Brush on more marinade, and bake it for another 15 minutes.
- Toss it a final time and finish with more marinade.
