This amazing homemade vegan chicken broth (bouillon) powder is a game-changer! It requires nine simple dry ingredients and takes 15 minutes to make.
Prepare for a plant-based chicken(less) bouillon powder with incredible flavor that surpasses any store-bought chicken bouillon cubes or seasoning.
My initial motivation for making vegan chicken seasoning was tofu. I wanted a chicken base to add to my air-fryer crispy tofu recipe. I wasn't disappointed. Vegan chicken tofu is undeniably delicious—perfect with ginger orange sauce, Huli Huli sauce, curry sauce, and more.
But my new favorite seasoning has uses far beyond tofu or soy curls. It's terrific for simmering tempeh and is the perfect substitute for vegetable broth in soups, stews, veggie burgers, and other recipes.

📋 Recipe Ingredients and Notes
Nutritional Yeast. 'Nooch' as it's sometimes called, adds a salty, umami depth of flavor. It's popular, so you may find different brands with slightly different flavors and textures from slightly to very flaky. Some contain added B12 and all should be vegan (although it's always good to check).
Celery Salt. Celery salt is a combination of ground celery seeds and salt. Substitute with 2 teaspoons ground celery seed and 1 teaspoon salt. Use the same substitute for celery flakes, although you won't need to grind them first.
Paprika. I used smoked paprika for this recipe. I recommend using regular paprika if you find the smoked flavor overpowering.

🥘 How to Use Vegan Chicken Broth Powder
Chicken Broth: Mix 2 teaspoons of chicken seasoning powder with 1 cup of hot water for a delicious vegan chicken broth substitute.
Chicken Marinade: Add 1-2 tablespoons of bouillon powder, ¼ cup each soy sauce and lemon juice, and you'll have an amazing chicken marinade for tofu or soy curls.
♨️ Storage Tips
Store vegan chicken bouillon powder in an airtight container or jar with a lid in a cool, dry place away from sources of steam or moisture, such as the stove or Instant Pot. I recommend keeping your spice cabinets away from the heat because heat can impact the flavor of any dried herbs and spice mix.
Vegan chicken broth seasoning technically lasts for months, but the potency is as strong as the shortest expiration date of the individual ingredients.
Denise's Storage Tip: I speak from personal experience when I recommend that you check that your storage container and lid are completely dry. Moisture of any kind will cause your delicious chicken powder to clump.
💭 Frequently Asked Questions
Regular chicken broth, bouillon, or stock cubes are not vegan. There are commercial vegan bouillon powders available that you can mix with water to make vegan chicken broth. However, many of these products are expensive and higher in sodium than homemade.
Nutritional yeast or yeast flakes is an inactivated yeast product similar, but not the same as brewer's yeast or baker's yeast, the kind you use to make bread. Fortified nutritional yeast flakes have added vitamins and minerals, like B12, which is one reason, besides the nutty cheese flavor, they are used in vegan recipes. Yeast extract, which is quite bitter, comes from Brewer's yeast.
Look for nutritional yeast at large grocery stores or your local health food store. You can also find it online from many sources.
